Love Avocados? This Breakfast Recipe Will Win You Over


Thanksgiving week is over and that means it’s back to work. As college students, we’ve had a whole week off of school to relax and take a break from the stresses of our usually busy schedule. However, if you’re anything like the average person, you’ve probably filled that week off with delectable, savory foods that certainly weren’t short on calories. You’re most likely feeling heavy and dreading this week. Today, we’ve found a great breakfast recipe for you to try as you get back into your usual schedule. We’re sure it will leave you feeling refreshed and ready to take on the week.

Breakfast Smashed Avocado Tomato Toast with Fried Poached Egg

Ingredients:

-2 slices of gluten-free or whole grain toast

-1 avocado

-1 wedge lemon

-Sea salt

-2 fried eggs

-1 tomato, sliced

-Salt and fresh ground pepper to taste

Directions:

-Mash avocado with juice from lemon wedge and sea salt to taste. Spread on top of toast. Top with fried egg and fresh tomato slices. Season with a little salt and fresh ground pepper.

Bonus: Sautee the tomato slices a little and drizzle with olive oil for added flavor.
